Produced by Don Cosme Hernandez and his son Cirilo, Alipus San Baltazar is an acclaimed espadin mezcal. Their fermentation process takes place in vintage pine vats, resulting in a soft and fruity mezcal with a balanced minerality. Difficult to find in Australia, the San Baltazar is a highly sought-after Alipus mezcal that is the most popular in Mexico. Grown in rolling hills at an altitude of 4100 feet, the light, calciferous soils are dotted with shale and rock. Alipus initiated in 1999 with a mission to support traditional mezcal producers, and has since become a community for 9 independent makers in Oaxaca, Mexico.
