With Xaymaca Special Dry, Plantation resurrects the classic Jamaican style of 19th century rum, using 100% pot still distillation to create a bold and flavorful experience. This expression showcases the signature "rum funk" with hints of black banana and flambéed pineapple, achieved through a blend of rums from the old John Dore pot still at Long Pond and the Vendôme at Clarendon. The result is a slightly smoky and meaty aroma with fruity, herbal, and sour notes, followed by a palate filled with rose water, soursop, pear, white grape, apricot, and sugar-apple.
